Turkey Gravy
Ingredients
- turkey giblets and neck
- 2 celery stalks
- 2 carrots
- 1 onion
- fresh parsley
- 1 tbsp cornstarch
- salt to taste
- black pepper to taste
Instructions
- While the turkey is in the oven cooking, place all ingredients in a large pot and cover with about 5-6 cups of water.
- Simmer approximately 1 hour.
- Remove from heat and strain broth; discard cooked vegetables and reserve broth for gravy.
- When turkey is finished cooking, transfer it to a platter and pour juices into a measuring cup (preferably one that will separate the grease).
- When fat rises to the top, spoon it out and add it to the turkey drippings left in the pan.
- Heat in roasting pan over 2 burners.
- Mix flour or cornstarch with cold water and add to pan.
- Add broth, salt and pepper.
- Stir until desired consistency is reached, adding flour or water as necessary.
