Turkey Gravy

Ingredients

  • turkey giblets and neck
  • 2 celery stalks
  • 2 carrots
  • 1 onion
  • fresh parsley
  • 1 tbsp cornstarch
  • salt to taste
  • black pepper to taste

Instructions

  1. While the turkey is in the oven cooking, place all ingredients in a large pot and cover with about 5-6 cups of water.
  2. Simmer approximately 1 hour.
  3. Remove from heat and strain broth; discard cooked vegetables and reserve broth for gravy.
  4. When turkey is finished cooking, transfer it to a platter and pour juices into a measuring cup (preferably one that will separate the grease).
  5. When fat rises to the top, spoon it out and add it to the turkey drippings left in the pan.
  6. Heat in roasting pan over 2 burners.
  7. Mix flour or cornstarch with cold water and add to pan.
  8. Add broth, salt and pepper.
  9. Stir until desired consistency is reached, adding flour or water as necessary.
