Shepherd's Pie
Ingredients
- 1 ½ lb ground beef
- 1 onion (diced)
- 4 carrots (diced)
- 2 garlic cloves (minced)
- 2 tbsp flour
- 1 cup beef stock
- ⅓ cup red wine
- 2 tbsp tomato paste
- 2 tsp parsley (chopped)
- ½ tsp fresh rosemary (chopped)
- ½ tsp salt
- black pepper (to taste)
- 1 cup mashed potatoes (prepared and warmed to at least room temperature)
- 1 cup cheddar cheese (shredded)
Instructions
- In a large skillet, cook ground beef over medium heat until most of the pink has disappeared.
- Add onions and carrots and continue to cook until vegetables are soft.
- Add garlic and stir for 30 seconds until fragrant.
- Add flour and stir to coat.
- Add beef stock, red wine, tomato paste, Worcestershire, parsley, thyme, rosemary, paprika, salt, and pepper. Simmer until the liquid thickens to desired consistency.
- Stir in peas.
- Spoon mixture into baking dish. Top with mashed potatoes and shredded cheddar cheese.
- Bake uncovered at 350 degrees for 30-35 minutes.
