Shepherd's Pie

Ingredients

  • 1 ½ lb ground beef
  • 1 onion (diced)
  • 4 carrots (diced)
  • 2 garlic cloves (minced)
  • 2 tbsp flour
  • 1 cup beef stock
  • ⅓ cup red wine
  • 2 tbsp tomato paste
  • 2 tsp parsley (chopped)
  • ½ tsp fresh rosemary (chopped)
  • ½ tsp salt
  • black pepper (to taste)
  • 1 cup mashed potatoes (prepared and warmed to at least room temperature)
  • 1 cup cheddar cheese (shredded)

Instructions

  1. In a large skillet, cook ground beef over medium heat until most of the pink has disappeared.
  2. Add onions and carrots and continue to cook until vegetables are soft.
  3. Add garlic and stir for 30 seconds until fragrant.
  4. Add flour and stir to coat.
  5. Add beef stock, red wine, tomato paste, Worcestershire, parsley, thyme, rosemary, paprika, salt, and pepper. Simmer until the liquid thickens to desired consistency.
  6. Stir in peas.
  7. Spoon mixture into baking dish. Top with mashed potatoes and shredded cheddar cheese.
  8. Bake uncovered at 350 degrees for 30-35 minutes.
