Ravioli with Arugula Cream Sauce

Ingredients

  • 40 cheese ravioli
  • 1 cup heavy cream
  • 2 cloves of garlic, peeled
  • 2 scallions (chopped) (could use more)
  • 4 cups arugula
  • salt and pepper to taste (needs plenty of salt)

Instructions

  1. Combine the heavy cream, garlic, scallions, and arugula in a blender. Mix on medium speed until creamy and smooth - not too long or it will get chunky as the cream turns to butter.
  2. Transfer the arugula sauce to a skillet and cook over medium heat. Add salt and pepper to taste. Add the ravioli and a little of the reserved cooking water when the mixture simmers.
  3. Serve ravioli with the sauce, additional arugula, parmesan cheese, and a lemon wedge.

For serving:

  • More arugula
  • Parmesan cheese
  • Lemon wedge (or squeeze into sauce before serving)
