
Ravioli with Arugula Cream Sauce
Ingredients
- 40 cheese ravioli
- 1 cup heavy cream
- 2 cloves of garlic, peeled
- 2 scallions (chopped) (could use more)
- 4 cups arugula
- salt and pepper to taste (needs plenty of salt)
Instructions
- Combine the heavy cream, garlic, scallions, and arugula in a blender. Mix on medium speed until creamy and smooth - not too long or it will get chunky as the cream turns to butter.
- Transfer the arugula sauce to a skillet and cook over medium heat. Add salt and pepper to taste. Add the ravioli and a little of the reserved cooking water when the mixture simmers.
- Serve ravioli with the sauce, additional arugula, parmesan cheese, and a lemon wedge.
For serving:
- More arugula
- Parmesan cheese
- Lemon wedge (or squeeze into sauce before serving)
