Quick Scalloped Potatoes
Ingredients
- 4 Potatoes (peeled and sliced into 1/4-inch slices)
- ½ cup onion (chopped)
- 2 tbsp butter
- 2 tbsp all-purpose flour
- 2 tsp salt
- 1 ½ cups milk
- ½ cup cheddar cheese (shredded)
- ⅛ tsp paprika
Instructions
- Place potatoes, onion, and butter in a large microwave-safe dish.
- Mix flour and salt in a bowl; sprinkle over potatoes and gently toss until vegetables are coated.
- Pour milk over the potatoes.
- Preheat oven to 450 degrees.
- Cook in the microwave on high setting until potatoes are tender, about 15 minutes, stirring every 5 minutes.
- Sprinkle potatoes with shredded cheese and paprika.
- Cook in the oven for 10 minutes or until cheese is melted and slightly browned.
