
Prime Rib Roast with Roasted Potatoes
Ingredients
- 5 lb standing rib roast (angus or prime grade) at room temperature
- 2 tsp kosher salt
- 4 tsp garlic (minced)
- black pepper
- 4 large Yukon Gold potatoes
- 2 sprigs fresh rosemary
- 6 cloves garlic (minced)
- salt to taste
- black pepper to taste
Instructions
- Place the roast in the roasting pan and coat it with salt.
- Combine mustard and a tablespoon of minced garlic and spread evenly over the roast. Season with pepper.
- Roast 20 minutes at 450 degrees.
- Lower the temperature to 325 degrees and add potatoes to the pan, coating with the meat drippings.
- Season with salt and pepper. Sprinkle with rosemary and 6 cloves of garlic.
- Roast an additional hour and 25 minutes, turning potatoes once or twice.
- Let rest 15-20 minutes before carving.
