Prime Rib Roast with Roasted Potatoes

Ingredients

  • 5 lb standing rib roast (angus or prime grade) at room temperature
  • 2 tsp kosher salt
  • 4 tsp garlic (minced)
  • black pepper
  • 4 large Yukon Gold potatoes
  • 2 sprigs fresh rosemary
  • 6 cloves garlic (minced)
  • salt to taste
  • black pepper to taste

Instructions

  1. Place the roast in the roasting pan and coat it with salt.
  2. Combine mustard and a tablespoon of minced garlic and spread evenly over the roast. Season with pepper.
  3. Roast 20 minutes at 450 degrees.
  4. Lower the temperature to 325 degrees and add potatoes to the pan, coating with the meat drippings.
  5. Season with salt and pepper. Sprinkle with rosemary and 6 cloves of garlic.
  6. Roast an additional hour and 25 minutes, turning potatoes once or twice.
  7. Let rest 15-20 minutes before carving.

*If you like rare meat, this comes out perfectly!!
