Pecan Crisps

Ingredients

  • ¾ cup pecans (chopped)
  • 2 ⅓ cups all-purpose flour
  • ½ tsp backing soda
  • ½ tsp salt
  • ½ cup butter (softened)
  • ½ cup light brown sugar (packed)
  • 1 egg
  • ½ cup vegetable oil
  • 1 tsp vanilla extract

Instructions

  1. Toast pecans at 325 degrees for 7-8 minutes until brown.
  2. Stir together dry ingredients.
  3. Beat sugar and butter until fluffy.
  4. Add egg, oil and vanilla.
  5. Beat in dry ingredients.
  6. Stir in pecans.
  7. Cover and refrigerate one hour.
  8. Make into two 2-inch logs (about 9 1/2 inches long).
  9. Freeze at least 4 hours.
  10. Grease cookie sheets.
  11. Preheat oven to 375 degrees.
  12. Cut frozen logs into 1/4 inch slices.
  13. Place in upper 1/3 of oven. Bake 9-11 minutes until light brown.
