Pancakes v2

Ingredients

  • 3 ⅓ cups flour
  • 6 tbsp sugar
  • 4 tsp baking powder
  • 1 tsp baking soda
  • 3 tsp kosher salt
  • 2 eggs
  • 2 ½ cups buttermilk
  • 6 tbsp melted butter (cooled)
  • 2 tsp vanilla extract
  • 2 tsp cinnamon

Instructions

  1. In a large bowl, sift together flour, sugar, baking powder, baking soda, and salt. Make a well in the center and pour in the eggs, buttermilk, melted butter, vanilla extract, and cinnamon; mix until smooth.
  2. Let the batter rest in the bowl for 30 minutes. (This resting time ensures the batter is thick and the pancakes are extra fluffy. DO NOT SKIP.)
  3. Heat a lightly oiled griddle or frying pan over medium-high heat. Pour or scoop the batter onto the griddle. Brown on both sides and serve hot.
