Meatloaf with Brown Sugar-Ketchup Glaze

Glaze

Ingredients

  • ½ cup ketchup
  • ¼ cup dark brown sugar
  • 4 tsp apple cider vinegar

Instructions

  1. Mix all glaze ingredients in a small saucepan and set aside.
  2. Preheat oven to 350 degrees.
  3. Heat oil in a medium skillet.
  4. Add onion and garlic and saute until softened, about 5 minutes.
  5. Set aside to cool while preparing the remaining ingredients.

Meatloaf

Ingredients

  • 2 tsp vegetable oil
  • 1 onion chopped
  • 2 cloves of garlic (minced)
  • 2 eggs
  • ½ tsp dried thyme
  • 1 tsp salt
  • ½ tsp black pepper
  • 2 tsp dijon mustard
  • 2 tsp Worcestershire sauce
  • ¼ tsp hot sauce
  • ½ cup milk
  • 1 lb ground beef
  • 1 lb ground port
  • 1 lb ground veal
  • ⅔ cup bread crumbs
  • 310 cup fresh parsley (minced)
  • 8 slices of bacon

Instructions

  1. Mix the eggs, thyme, salt, pepper, mustard, Worcestershire sauce, hot pepper sauce and milk in a large bowl. Add the meat, crackers, parsley, and cooked onion and garlic.
  2. Mix with a fork until evenly blended and the meat mixture does not stick to the bowl. (If the mixture sticks, add a couple extra tablespoons of milk, until it no longer sticks.)
  3. Place the meat mixture onto a work surface. WIth wet hands, pat the mixture into a loaf shape approximately 9 by 5 inches. Place on top of foil (see below for pan setup). Brush with half the glaze, then arrange the bacon slices crosswise over the loaf. Use a spatula to tuck the bacon ends underneath the loaf.
  4. Bake until bacon is crisp and the internal temperature of the loaf reaches 160 degrees, about 1 hour. Cool at least 20 minutes. Simmer the remaining glaze over medium heat until thickened slightly. Slice and serve with the remaining glaze passed separately.

Pan Setup

Line a rimmed baking sheet with foil. Place a cooling rack on top. Cover the cooling rack with foil. Poke holes in the foil - make sure the holes are large enough for grease to drip through, so it won't just sit on top! Place meatloaf on top of the foil-covered cooling rack. This allows the meatloaf to cook evenly on all sides, and it won't be sitting in a pool of grease while it cooks.
