Dan's Insanity Chili
Ingredients
- 2 tbsp vegetable oil
- 1 drop of Dave's Insanity Sauce
- 2 cups onions chopped
- salt
- cayenne pepper to taste
- 1 lb ground beef
- 1 ½ lb steak cubed
- 2 tsp chili powder
- 2 tsp ground cumin
- crushed red pepper
- 2 tsp dried oregano
- 2 tbsp garlic chopped
- 3 cups crushed tomatoes
- ½ cup tomato paste
- 2 cups beef stock
- 2 cups canned dark red kidney beans
- 1 ½ tbsp all-purpose flour
- 2 oz dark chocolate
- 16 oz Fritos corn chips
- 8 oz Monterey jack cheese (shredded)
- ½ cup sour cream
Instructions
- In a large stockpot, heat the vegetable oil.
- When the oil is hot, add the onions and saute for 3 to 5 minutes, or until the vegetables start to wilt.
- Season with Dave's Insanity Sauce, salt and cayenne.
- Stir in the stew meat, chili powder, cumin, crushed red pepper, and oregano.
- Brown the meat for 5 to 6 minutes.
- Stir in the garlic, tomatoes, tomato paste, beef stock, and beans.
- Bring the liquid up to a boil and reduce to a simmer. Simmer the liquid, uncovered for 1 hour, stirring occasionally, or until the beef is tender. Skim off the fat occasionally.
- Add the chocolate pieces, and continue simmering
- Mix the flour and water together. Slowly stir in the flour slurry and continue to cook for 30 minutes.
- Reseason with cumin salt and cayenne.
- Spoon the chili into bowls. Garnish with the grated cheese, sour cream and Fritos.
