Delicious Chili with Fritos

Dan's Insanity Chili

Ingredients

  • 2 tbsp vegetable oil
  • 1 drop of Dave's Insanity Sauce
  • 2 cups onions chopped
  • salt
  • cayenne pepper to taste
  • 1 lb ground beef
  • 1 ½ lb steak cubed
  • 2 tsp chili powder
  • 2 tsp ground pepper
  • crushed red pepper
  • 2 tsp dried oregano
  • 2 tbsp garlic chopped
  • 3 cups crushed tomatoes
  • ½ cup tomato paste
  • 2 cups beef stock
  • 2 cups canned dark red kidney beans
  • 1 ½ tbsp all-purpose flour
  • 2 oz dark chocolate
  • 16 oz Fritos corn chips
  • 8 oz Monterey jack cheese (shredded)
  • ½ cup sour cream

Instructions

  1. In a large stockpot, heat the vegetable oil.
  2. When the oil is hot, add the onions and saute for 3 to 5 minutes, or until the vegetables start to wilt.
  3. Season with Dave's Insanity Sauce, salt and cayenne.
  4. Stir in the stew meat, chili powder, cumin, crushed red pepper, and oregano.
  5. Brown the meat for 5 to 6 minutes.
  6. Stir in the garlic, tomatoes, tomato paste, beef stock, and beans.
  7. Bring the liquid up to a boil and reduce to a simmer. Simmer the liquid, uncovered for 1 hour, stirring occasionally, or until the beef is tender. Skim off the fat occasionally.
  8. Add the chocolate pieces, and continue simmering
  9. Mix the flour and water together. Slowly stir in the flour slurry and continue to cook for 30 minutes.
  10. Reseason with cumin salt and cayenne.
  11. Spoon the chili into bowls. Garnish with the grated cheese, sour cream and Fritos.
