Corn Salad
Dressing
Ingredients
- ⅓ cup fresh-squeezed lime juice
- 3 tbsp olive oil
- 2 tbsp white or red wine vinegar
- 2 cloves of garlic (finely minced)
- 1 ½ tsp salt
- freshly ground black pepper
Salad
Ingredients
- 3 cups corn (about four ears, cooked and cut from the cob)
- 16 oz grape tomatoes (halved)
- ½ large red onion (thinly sliced)
- 4 oz cotija cheese (crumbled)
- ½ cup fresh cilantro (chopped)
- 3 avocados (diced and tossed in lime juice)
Instructions
Place the corn in a large bowl. Add the tomatoes, cotija cheese & cilantro to the bowl and gently mix all ingredients with a large spoon until well combined. Stir in the diced avocado just before serving.
