Corn Salad

Dressing

Ingredients

  • ⅓ cup fresh-squeezed lime juice
  • 3 tbsp olive oil
  • 2 tbsp white or red wine vinegar
  • 2 cloves of garlic (finely minced)
  • 1 ½ tsp salt
  • freshly ground black pepper

Salad

Ingredients

  • 3 cups corn (about four ears, cooked and cut from the cob)
  • 16 oz grape tomatoes (halved)
  • ½ large red onion (thinly sliced)
  • 4 oz cotija cheese (crumbled)
  • ½ cup fresh cilantro (chopped)
  • 3 avocados (diced and tossed in lime juice)

Instructions

Place the corn in a large bowl. Add the tomatoes, cotija cheese & cilantro to the bowl and gently mix all ingredients with a large spoon until well combined. Stir in the diced avocado just before serving.
