Chocolate Chipotle Chili

Ingredients

  • 1 lb ground beef
  • 1 lb hot/spicy sausage
  • 2 tbsp olive oil
  • 2 medium onions, diced
  • 1 red pepper, diced
  • 5 cloves of garlic, minced
  • 2 tbsp cumin
  • 2 tbsp chili powder
  • 2 tbsp smoked paprika
  • 2 tbsp black pepper
  • 1 tbsp kosher salt
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 1 tsp cayenne pepper
  • 6 oz tomato paste
  • 14 oz can petite diced tomatoes
  • 40 oz can kidney beans with liquid
  • 15 oz can corn
  • 2 chipotle peppers in adobo sauce (diced with seeds), plus 2 TBSP of sauce
  • 2 cups beef stock
  • 12 oz amber beer
  • 4 tbsp bbq sauce
  • 3 tbsp honey
  • 2 tbsp red wine vinegar
  • 2 tbsp light brown sugar
  • 2 tbsp cocoa powder
  • chopped scallions for garnish
  • shredded cheese for garnish

Instructions

In a large pan, brown the ground beef and sausage. Drain out the grease. 

In a large stockpot, sauté onion and red pepper in olive oil over medium heat until soft. Add garlic and stir briefly. 

Add cooked beef and sausage to the stockpot along with all spices. Cook 2-3 minutes while stirring to combine.

Add remaining ingredients and simmer for 1-2 hours. Serve with chopped scallions and shredded cheese for garnish.
