Chicken with Stuffing and Balsamic Reduction

Ingredients

  • 2 chicken breasts
  • 1 cup dry stuffing mix
  • ½ cup mushrooms sliced
  • ¼ cup butter melted
  • ¼ cup mozzarella shredded
  • 2 tbsp balsamic vinegar
  • 2 tbsp honey

Instructions

  1. Place chicken breasts on a baking sheet.
  2. Mix stuffing and mushrooms with butter and water and put half on each chicken breast.
  3. Combine balsamic vinegar and brown sugar (or something sweet) in a pan and cook until reduced by 50%.
  4. Drizzle over chicken and stuffing.
  5. Top with mozzarella cheese.
  6. Bake.
