Chicken with Stuffing and Balsamic Reduction
Ingredients
- 2 chicken breasts
- 1 cup dry stuffing mix
- ½ cup mushrooms sliced
- ¼ cup butter melted
- ¼ cup mozzarella shredded
- 2 tbsp balsamic vinegar
- 2 tbsp honey
Instructions
- Place chicken breasts on a baking sheet.
- Mix stuffing and mushrooms with butter and water and put half on each chicken breast.
- Combine balsamic vinegar and brown sugar (or something sweet) in a pan and cook until reduced by 50%.
- Drizzle over chicken and stuffing.
- Top with mozzarella cheese.
- Bake.
