Banana Nut Crunch Muffins

MUFFIN INGREDIENTS

1 1/2 cups all-purpose flour

1 teaspoon baking powder

1 teaspoon baking soda

1/4 teaspoon salt

1/2 teaspoon cinnamon

3 ripe bananas, mashed

2/3 cup sugar

1/2 cup butter, melted

1 egg

1 teaspoon vanilla

 

TOPPING INGREDIENTS

1/3 cup light brown sugar, packed

2 tablespoons all-purpose flour

2 tablespoons oats

2 tablespoons butter, melted

1/3 cup chopped pecans

 

INSTRUCTIONS

Preheat oven to 425 degrees. Spray muffin pan with baking spray.

Combine flour, baking powder, baking soda, salt, and cinnamon in a small bowl.

Combine mashed bananas, sugar, butter, egg, and vanilla in a medium bowl. Add in flour mixture and stir until just combined. Divide batter into 8 muffin cups.

Combine brown sugar, flour, oats, butter, and chopped pecans in a small bowl. Spoon topping over muffins.

Bake 5 minutes at 425 degrees. Lower temperature to 375 degrees and continue baking for 15-20 minutes, or until muffin tops are browned and a toothpick comes out clean.
