Norma's Shortbread

Ingredients

4 sticks unsalted butter
1 Cup sugar
1/2 tsp salt
3 1/2 Cups all-purpose flour

Instructions

  1. Cream butter, sugar and salt.
  2. Mix in flour.
  3. Pat onto 10x15 cookie sheet.
  4. Refrigerate 10 minutes.
  5. Prick with a fork.
  6. Bake at 250 degrees for 45 minutes.
  7. Remove and cut into squares.
  8. Sprinkle with sugar.
  9. Bake 15-25 minutes longer.

 

tip: sprinkle the sugar on with a spoon held high to evenly coat the cookies.

Variations

Lemon Poppy Seed

  • Add Zest from 1 lemon
  • Add 1/2 - 1 teaspoon lemon extract
  • Add poppy seeds

Orange Cranberry

  • Substitute 1/2 cup light brown sugar 
  • Add Zest from 2 oranges
  • Add 1/2 cup chopped dried cranberries
  • Top with a dried cranberry 

Almond

  • Add 1/2 teaspoon almond extract
  • Add 1/2 cup ground almonds
  • Top with a sliced almond

Cinnamon Pecan

  • Substitute light brown sugar
  • Add 1 teaspoon vanilla
  • Add 1/2 cup ground pecans
  • Add LOTS of cinnamon
  • Top with ground pecans, cinnamon and sugar

Peanut Butter

  • 3 sticks butter (instead of 4)
  • Add 1 cup peanut butter
  • Substitute light brown sugar
  • Add 1 teaspoon vanilla
  • Add 1 egg white
  • Top with a peanut butter chip

Dark Chocolate Peppermint

  • Add 1/2 teaspoon peppermint extract (no more!)
  • Top with dark chocolate chips
  • Top with crushed candy canes
