Blueberry Oatmeal Muffins

Ingredients

1 1/4 Cups all-purpose flour
1/2 Cup light brown sugar packed
1/2 tsp salt
1/2 tsp cinnamon
1/4 tsp baking soda
1/4 tsp nutmeg
1 egg lightly beaten
1 Cup plain yogurt
1/4 Cup butter melted
1 Tbsp lemon zest
1 1/2 Cups fresh blueberries

Instructions

  1. In a large bowl, combine the first 8 ingredients.
  2. In a smaller bowl, combine the lightly beaten egg, yogurt and melted butter. Add the lemon zest.
  3. Stir wet ingredients into dry ingredients just until moistened. Fold in blueberries.
  4. Coat muffin cups with cooking spray or use paper liners. Fill 3/4 full with batter.
  5. Bake at 400˚ for 18 minutes or until a toothpick comes out clean.
  6. Cool for 5 minutes before removing from pan to a wire rack.
